We could for example:
A) add a new Romaic culture to be used in a mapping for Hellenistic cultures under the Roman Empire
B) rename the existing greek culture to Romaic, and use it only for the Roman Greeks

Note by @tanner918:

Greek, despite never having been owned by Rome, still has the traditions and stuff related to Rome/Byzantine Empire; should probably create a new culture to represent the Greeks not ruled by the Romans, and only map to the normal greek culture if owned by ROM, WRE, ERE
