Explicitly add EE name and tag to destination (#167)

* Explicitly add EE name and tag to destination

This avoids changes in containers.podman behaviour where the image name
is not always automatically appended (in particular, if you happen to
have a port specification)

* Re-adding missing yaml EOF denoter

* Check for undefined tag, make clearer order of precedence
